Zoodles with Avocado Pesto Sauce

I am always looking for a delicious, healthy and satisfying side dish, and this one does it. Goes great with any fish or chicken dish and is easy and quick to prepare. Just another way to get those 'greens' in. Plus, if you didn't see my article on how healthy avocados are for you... you should check that out too.


Serves 4


Ingredients:

  • 2 large zucchini, spiralized

  • 1 Tbsp olive oil

  • 1 ripe avocados

  • 1/2 cup fresh basil leaves

  • 2 cloves garlic

  • 1/4 cup pine nuts

  • 1 Tbsp lemon juice

  • 1/2 tsp. sea salt

  • 2 Tbsp olive oil

  • Salt n' pepper, to taste

Instructions:

  1. Spiralize your zucchini and set aside on paper towels so that any excess water is soaked up.

  2. In a food processor, add avocados, basil leaves, garlic, pine nuts, olive oil, lemon juice and salt n' pepper and blend until creamy.

  3. Spray oil in a large skillet over medium high heat then add zucchini noodles, cooking for about 1 to 2 minutes, tossing constantly, until tender.

  4. Transfer zucchini noodles to a large bowl and toss with avocado pesto.

  5. Season with a little Parmesan, serve and enjoy!
