This is so delicious and full of flavor. Add some pasta, zoodles or rice for extra carbs if needed. You can also substitute the coconut milk for heavy cream. But this is great as is in a bowl.
Ingredients:
3 chicken breasts
1 large shallot, chopped
3 cloves garlic, chopped
3 handfuls of spinach
1 jar of julienned sun-dried tomatoes, oil drained
3 cups coconut milk, unsweetened
2 cups parmesan cheese
Italian seasonings
Instructions:
Season, oil and bake chicken at 350 degrees for about 25 minute, or until done.
Meanwhile, in a large pan, saute the shallots, garlic and sun-dried tomatoes for a few minutes.
Add spinach.
Add coconut milk.
Add parmesan cheese.
Stir to combine and let simmer for a few minutes.
Once chicken is done, shred it.
Add to sauce, stir to combine.
Enjoy as is, or make pasta or something else to go with it.
