Whether y0u are making a weekend breakfast for the family, or possibly guests, this is great go-to for sharing. However, when there is no one to share with, I love to make a frittata on Sunday, so that I have leftovers for the rest of the week for an easy and quick breakfast. Also makes a great snack. You can add all kinds of different ingredients to your liking as well. Just follow the same process of how to cook it on the stove and finishing it in the oven.
IMPORTANT NOTE: make sure your pan is oven friendly.
Makes 6 servings.

Ingredients:
6-8 eggs
2 handfuls of spinach
1/2 cup red bell pepper, chopped
2 scallions, chopped
1 cup feta cheese crumbles
Salt and pepper
olive oil spray
Instructions:
Over medium heat, in a large fry pan, spray oil, and sauté onions and peppers.
Beat eggs in a small bowl, add to pan.
Add feta cheese and spinach. Stir to combine.
Cook for about 4 minutes, constantly scraping around the edges of the pan. Don't cook all the way, only until eggs being to slightly firm up.
Then bake in the oven for 10 minutes, or until egg center is firm to the touch.
Remove from oven, cut and serve.
Add a little salsa or hot sauce, if desired.
