Trying to keep it healthy.... this one is made with a cauliflower crust, no sauce, and just some yummy toppings. This makes for a great appetizer as well.
Ingredients:
1 cauliflower crust (I get mine from the frozen section, pre-made)
1 handful of spinach
1/2 C sliced onions
1/2 C sliced bella mushrooms
Dash of garlic powder, salt and pepper
1/2 C crumbled Feta cheese
Drizzle of balsamic glaze
Olive oil
Instructions:
Preheat oven according to crust packaging.
Remove crust from packaging, set aside.
Saute onions and mushrooms in a little olive oil with spices over medium heat until onions are translucent.
Brush crust with a little bit of olive oil.
Top with spinach.
Add onions, mushrooms and feta.
Bake for 12-15 minutes (or as directed for crust on packaging).
Remove and drizzle with balsamic glaze.
Slice and enjoy!
