Let's talk about Kale!

This dark leafy green vegetable can be quite intimidating to some, or just off-putting. But if you can find the right recipes, this vegetable offers a ton of health benefits to help with weight loss and weight management due to the fiber content, which helps you to feel fuller throughout the day.

Kale is also low in calories, rich in iron, and helps to speed up your metabolism. It is a strong source of Vitamin K, Vitamin C, and has antioxidants which help to combat cancer and aging.

In case you didn't know....there are actually 10 different types of kale options. But the ones you most commonly find in the grocery stores are curly kale, Tuscan kale, and red kale.

My go-to is curly kale (pictured below).

Important note - I highly recommend to remove the thick rib at the center of a kale leaf, as this is hard to chew and it adds bitterness. You can do this by running a sharp knife on either side of the rib to cut the leaf off for use, or you can hold simply tear the leaf off with your hands.


Here is one of my favorite, super easy kale salad recipes to get you started:

  1. Fill up a bowl with about 2-3 cups of torn leaves (bite size).

  2. Next, smash half of an avocado (with your hand) into the bowl leaves, coating the leaves. This acts as a sort of dressing and helps to break down the leaf a bit.

  3. Sprinkle with pink Himalayan salt, and drizzle with balsamic glaze (not vinegar....GLAZE). You can purchase glaze at the grocery store.

  4. Gently toss, and enjoy!
