This is my friends favorite go-to salad I make for a party. Perfect side to anything you put on the grill. Easy to make-ahead and dress it right before serving. Try it for your next dinner party!
Serves about 6-8 people as a side.
Ingredients:
4 C Arugula salad, slightly chopped
4 corn on the cob
1/4 C fresh parsley, chopped
3 Tbsp fresh basil, chopped
3 Tbsp fresh mint, chopped
1/4 C crumbled Cotija cheese
1/4 C pine nuts (or pepitas)
2 small avocados, diced
DRESSING
1/2 C mayo
2 Tbsp rice wine vinegar
2 Tbsp olive oil
2 Tbsp shallot, chopped
1/4 tsp paprika (more if you want more spice)
Dash of Salt 'n Pepper
Instructions:
Blend or mix all the dressing ingredients together, until well blended. Set aside.
Cut the kernels of the cob and sauté over medium-high heat with a little olive oil. Stir constantly. (You can also grill the corn if you prefer, then cut it of the cob).
Once corn in done, remove from heat and let cool completely before adding to salad mixture.
Add all the salad ingredients to a bowl, except the avocado (if serving later). I recommend cutting and adding avocado just before serving, along with dressing.
When ready to serve, add avocado and dressing, toss to combine, and serve!
