Chicken Fajita Bowl

Super simple, low carb, high protein meal. A great way to eat clean without the added fat, and very filling as well. I like to cook everything ahead, place in Tupperware separately, or create 4 meals in separate containers, which makes it super easy to grab and either throw a bowl together for a quick meal, or just grab your prepared meal and go. Can substitute chicken for shrimp or other protein of choice.

Makes 4 servings.

Ingredients:

  • 4 lg chicken breasts, cooked and chopped or shredded

  • 4 c shredded lettuce

  • 4 c brown rice

  • 2 c cheddar cheese, shredded (remove to reduce fat or dairy free)

  • 1 c onion, chopped

  • 1 c red bell pepper, chopped

  • 1 can black beans, drained and rinsed

  • 1-2 lg avocados, cut into chunks

  • 1/2 c salsa of choice

Instructions:

  1. If you haven't already, cook your chicken and rice, set aside. (I grilled my chicken for more flavor)

  2. In a large frying pan, add oil, heat over medium heat, and add onions and peppers. Saute for about 15 minutes, tossing occasionally. When done, remove and set aside.

  3. If eating immediately, choose a serving bowl and add 1 cup rice, 1 cup chicken, 1/4 cup cheese, 1/4 cup pepper/onion mixture, 1/4 cup black beans, 1 cup lettuce, a scoop of avocado, and salsa.

  4. If meal prepping, choose 4 containers to divide meals into and add amounts listed above to each. Refrigerate until ready to eat.

  5. Enjoy!
